Progresso Panko Review and Giveaway
I really enjoy cooking new and different meals for my family and I really love trying the newest cooking products when the come out on the market but I do have a couple of very picky eaters here at home so I have to be very careful what products I cook with. I had heard of Progresso Panko from many friends and some family and of course here on the world of blogs but I myself wasn’t quite sure what it was all I knew is that it was some kind of bread crumbs! I soon found out that Panko is a Japanese breadcrumb with a coarse texture and jagged edges and that makes for a really crunchy breadcrumb and is perfect for baking or frying so I decided to give it a try and thanks to Progresso and MyBlogSpark I was sent a Progresso Panko and Broth Prize Pack that included: 1 full size box of Progresso Panko breadcrumbs - plain flavor, 1 carton of Progresso Broth, a measuring cup, slotted spoon, soup ladle, a sheet pan and the Progresso Soups & More cookbook. So when the box arrived I was so excited to try it I surfed on over to Progressobroth.com to see what recipe I was going to put to the test and I finally decided on the Pesto Parmesan Chicken!!!
This was such a hit at the dinner table that I just had to share this recipe and I really recommend you to try this it’s great:
Prep Time: 10 Min
Start to Finish: 30 Min
4 boneless skinless chicken breasts (about 1 1/4 lb)
3 tablespoons basil pesto
2 tablespoons mayonnaise
1/2 cup Progresso® plain panko crispy bread crumbs
1/2 cup finely shredded Parmesan or Asiago cheese
Fresh basil leaves, if desired
1. Heat oven to 400°F. Line baking sheet with foil; spray with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/2-inch thick.
2. In shallow dish, mix together pesto and mayonnaise. In another shallow dish mix together bread crumbs and cheese. Dip chicken into pesto mixture then dip in panko mixture. Place on baking sheet.
3. Bake 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (165°F) and coating is golden brown. Garnish with basil.
Here are a few tips on how to use panko bread crubs:
• Breading 1-2-3: Panko adds the perfect light crunch to fish fillets, chicken breasts and pork chops. Dip in flour, then beaten egg and coat both sides in Panko before frying or baking
• Faux Fried: Instead of frying, bake Panko-coated chicken in a 400F oven for 20 minutes to get the same crispy crunch without the fat

ReplyDeleteMy tip for using broth is to use it in place of water in savory dishes. For example, when boiling potatoes for mashed potatoes, add 1 part water and 1 part broth. This imparts a rich flavor into your potatoes without adding a ton of butter and such.

If you don't want to do buffet style for the whole meal, maybe think at least about doing the salad that way; then everyone can add only what they actually want.

I make home entertaining easier by assigning someone to each task that needs to be done. Even my youngest child, who is seven, enjoys making sure all the napkins are set out and the oldest child who is ten loves to help with the cooking. If everyone has a job, it makes things go smooth!

ReplyDeleteCan you believe I just discovered Panko breadcrumbs! I use them to coat chicken and it makes the best stir fry chicken. Add a little Hoisen sauce after the breaded chicken is cooked and WOW! Great flavor!

I invite people over for brunch or lunch. With a baby in the house, having folks over in the evening isn't really a good idea right now, but lunch is a great time for us to get to visit with people. I've found that people have responded to these invites very positively, and I'm much less stressed hosting in the middle of the day, it seems!

The only big party I've ever hosted is a block party outside on my lawn, which I did for five years. For this, I have odd numbered houses bring a salad, even numbers bring a dessert, and select people volunteered the extras!

My tip for using broth is to remember that, unless it is reduced sodium, prepared broth can be very salty. Taste before adding any additional salt mentioned in the recipe.
